Spicy Shrimp Pizza
Serves 4

Ingredients:

2 large garlic cloves, minced
1 tablespoon olive oil
1 ea. 16 ounce can of whole tomatoes including juice, chop ½ inch
¼ teaspoon dried oregano
Cayenne to taste
1 pound small shrimp, peeled and deveined
1/3 pound shredded mozzarella cheese, preferably fresh mozzarella
1 large (14”) pizza crust.
Preparation:

1.   Heat tablespoon of olive oil in a small sauté pan. Add the garlic and sauté, take care not to burn. Add the tomatoes with juice, oregano, and cayenne. Reduce the liquid in the pan slightly. Add the shrimp and cook through. Check seasoning and remove from heat
2.   Place pizza shell on a oiled baking sheet. Spread the cooked shrimp and tomato over the pizza crust. Bake at 450 until done, approximately 8-10 minutes.
3.   Serve with fresh grated parmesan and crushed red pepper flakes.
4.   If desired, other vegetables can be sautéed along with the garlic and tomatoes. Onions, mushrooms and peppers are particularly good.
